Cook ziti in boiling, salted water. Set aside. Shred cheese. Shred carrots and chop onions and garlic.
To prepare sauce: heat olive oil in saucepan. Add carrots and onion; cook for about 5 minutes. Add garlic, tomato sauce, oregano, and marjoram. Simmer for 15 minutes.
Preheat oven to 180 C (350 F) degrees.
Mix cooked ziti and sauce together and put into an oven-safe dish or pan. Make sure the pan or dish is adequately oiled to prevent sticking.
Combine mozzarella and Parmesan cheeses; sprinkle over ziti mixture. Sprinkle with parsley and bake for 25 minutes, or until cheese is browned.
