Mix together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves. In a separate bowl, mix butter, brown sugar, and egg. Mix in molasses, vanilla, and lemon zest. Combine all ingredients together. Wrap up dough in plastic wrap and store in refrigerator for future use. Refrigerate for at least 2 hours, before baking.
To bake cookies:
Preheat oven to 375 F (190 C). Sprinkle flour on rolling pin and cutting board. Roll dough out into thin, 1/2 cm thick (or less) portions. Using cookie cutter, or butter knife, cut out shapes. Bake for 7-10 minutes.
