Indian Cauliflower Rice

  • 4 Servings:

  • 200 g Cauliflower
  • 500 ml Water
  • 1 tsp Salt
  • 150 g Rice
  • 50 g Onions
  • 4 whole Green Onions
  • .25 tsp Pepper
  • .25 tsp Red Pepper Flakes
  • 3 cloves Garlic
  • .25 tsp Turmeric
  • 1 tbsp Olive Oil
  • 1 tsp Lentils (dark colored variety)
  • .25 tsp Bread Spice (Brotgewürz)
  • 1 tsp Lemon (juice)
  1. Directions:

  2. Finely chop onions, pepper, and chop cauliflower into florets. Drop cauliflower in boiling water for 5 minutes. Remove the cauliflower and boil the water again, adding the rice and salt. Bring heat down to medium low and cook with lid on until liquid is gone.
  3. In a separate pan, add oil and cook onions until translucent. Add cauliflower, garlic, turmeric, pepper, bread spice, and salt to taste. Add 50 ml water. Add rice, cook until liquid is gone. Mix in lemon juice last.
