Linguine with Peppers

  • 200 g Linguine
  • 1 tbsp Olive Oil
  • .5 small Onion
  • 1 clove Garlic
  • 80 g Bell Peppers (assorted colors: red, yellow
  • .5 tbsp Parsley (dried)
  • 60 g Parmesan Cheese
  1. Directions:

  2. Julienne cut peppers and finely chop onions. Mince garlic.
  3. In a pan, add oil and saute onions for 5 minutes. Add garlic, cooking for an additional 2 minutes. Add peppers, cooking for 6 more minutes.
  4. Cook pasta in boiling water for one minute less than package instructions. Drain pasta, reserving half a cup of the cooking water. Mix pasta and vegetables together. Garnish with Parmesan and parsley.
