Onion Rice–a–Roni

  • 6 Servings:

  • 1 tbsp Olive Oil
  • 55 g Pasta (Vermicelli)
  • 185 g Rice
  • .5 Onion
  • 1 tsp Parsley (dried)
  • 550 ml Broth
  • 1 tbsp Soy Sauce
  1. Directions:

  2. Finely chop onions and set aside.
  3. On medium heat, put oil in a small pot. Mix in just the noodles- lightly toasting them until browned. Remove from heat.
  4. Add broth, onion, parsley, and soy sauce. Bring to a boil and add rice. Remove pot from burner and turn off heat. Bring liquid to a simmer on medium low heat, with lid on. Cook for about 20-25 minutes.
