500 g Vegetables (such as broccoli, carrots, onions, cauliflower)
1 tbsp Olive Oil
1 tsp Salt
.25 tsp Pepper
2 tbsp Parmesan Cheese (grated) - optional
Preheat the oven to 220 C (400 F). Wash vegetables and cut into pieces (about 1 cm thick pieces for root vegetables such as carrots). Mix the vegetables, salt, pepper and olive oil in a large bowl - mix well! Place the vegetables on a baking sheet with baking paper and spread the vegetables on top. Important: A thin layer is best to crisp the vegetables on all sides. (Optional: sprinkle with cheese.) Roast about 30 minutes in the oven - or until slightly scorched.
