Rosemary Crackers (Ciappe)

  • Makes 20 Crackers:

  • 250 g Flour
  • 125 ml Water
  • 5 tsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 2 tbsp Rosemary (dried)
  • 1 tsp Kosher Salt (coarse salt for sprinkling)
  1. Directions:

  2. Preheat oven to 150 C / 300 F. In a bowl, combine all the ingredients. Take care to mix just enough and do not over-knead. Roll out dough, using just a little at a time.
  3. Prepare a parchment paper-lined baking sheet. Transfer cracker dough to pan. Lightly pierce crackers with a fork and using the back of a butterknife, cut out rectangular cracker shapes. Light moisten the top of the Sprinkle some coarse salt on the dough.
  4. Bake for 18-20 minutes, or until lightly browned.
