Sea–Bear Rice

  • For the Rice
  • 72 g Rice
  • 250 ml Water
  • .75 tsp Salt
  • .5 tsp Olive Oil
  • Spice Blend
  • .5 tsp Cumin
  • dash Pepper
  • .125 tsp Red Pepper Flakes
  • 7 g Garlic (about 3 cloves)
  • .25 tsp Parsley
  • Onion Topping
  • .5 tsp Olive Oil
  • .75 Onion
  1. Directions:

  2. Mince garlic and finely chop onion and parsley. Set aside spice blend in a bowl.
  3. In a pot, heat half teaspoon oil and mix together with spice blend and garlic. Add .25 onion, cooking for 10 minutes. Add salt and cup water. Bring liquid to a boil.
  4. Stir in rice, then reduce heat to a simmer. Cook with lid for an additional 15-20 minutes until rice is done and liquid is gone.
  5. While rice is cooking, put half teaspoon oil in a separate pan on medium low heat and add remaining onions. Cook onions until lightly browned and caramelized.
  6. Once the rice is cooked, mix gently, and top rice with parsley and caramelized onions. Optionally serve with lemon wedges as well!
