Skillet Spinach Rice

  • 5-6 Servings:

  • 185 g Rice
  • 2 tbsp Olive Oil
  • 1 clove Garlic
  • 100 g Spinach (frozen)
  • 1 tsp Salt
  1. Directions:

  2. Bring 500 ml of water to a boil. Add rice and cook with lid on for about 14 minutes. In the meantime, steam cook the spinach in a pot for about 5 minutes on medium heat. Set aside.
  3. Mince garlic. On medium heat, add olive oil and garlic. Cook for 2 minutes. Add spinach. Cook another 2 minutes. Add cooked rice, salt. Mix everything together, and continue cooking to taste for a few minutes longer.
