Dissolve yeast in water and let rest for about 5 minutes. Mix flour and salt in bowl. Add yeast and water and yogurt to bowl. Mix together until elastic. Lightly oil dough and place in a covered bowl to rise.
Cut dough in half. Roll out into 2 cm thick rounds. Optional: Brush with water and sprinkle with sesame seeds and/or Poppy seeds. Cover and let dough rise for 15 Minutes.
Preheat oven to 200 C (400 F). Before putting into oven, press into dough (by hand or with a utensil) a crust lip, and create intersecting rectangle lines (see picture) in the middle of the flatbread. Bake for about 15-20 minutes.
