Vegetarian Broth

  • 8-10 Servings:

  • 2 L Water
  • .5 Onion or Leek
  • 2 whole Carrots
  • .5 stalk Celery
  • 1 tsp Thyme (dried)
  • 2 whole Bay Leaves
  • 1 tbsp Parsley (dried)
  • 1 tsp Pepper
  • 2 tbsp Salt
  1. Directions:

  2. Place everything but the salt in large pot. Bring to a boil and then reduce to a simmer for 1 hour, or until vegetables are very soft. Strain broth, discarding solid pieces. Add salt.
  3. Cool broth and store in the refrigerator for up to 5 days or freeze for up to 3 months.
