Vermicelli with Stir–Fried Vegetables

  • 6 Servings:

  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 2 whole Carrots
  • 200 g Broccoli
  • .5 Cucumber
  • 2 tsp Salt
  • .25 tsp Ginger (dried)
  • 200 g Pasta (Vermicelli)
  1. Directions:

  2. Thinly slice carrots and cucumber. Chop garlic. Heat oil in pan on medium heat. Add garlic, carrots, broccoli, and cucumber. Stir-fry for 5 minutes. Mix in the salt. Mix in ginger. Cook vermicelli and drain liquid. Mix vermicelli and vegetables together.
